WI Resource Area

Ingredients

Approx 300 g of thawed frozen spinach

White onion

1 tbs spoon butter

250 g grated cheddar cheese

200g cream cheese

150ml soured cream

Approx 150g mozzarella ball

Tin of artichokes

Tabasco

Method

Drain artichokes and chop roughly

Squeeze water from spinach, then chop roughly.  Put to one side with chopped artichokes

Dice onion and gently fry in butter on low-medium heat until tender

Add the cheddar, cream cheese and soured cream to the onions.  Stir on low-medium heat until melted.

Add chopped mozzarella and melt, then add spinach and artichokes.

Add quite a bit of Tabasco – it can take a lot.  Keep adding to taste and season if necessary

Transfer mixture to oven proof dish

Sprinkle more cheddar if you wish – you can never have too much – and top with bread crumbs

Cook in oven – approx. 170 degrees centigrade for 15-20 minutes or until golden and bubbling.

Serve with pitta – get cheesy and enjoy!

Tip

Always use frozen spinach.  Fresh just isn’t as good.

You can make the mix in advance and store in an oven proof dish in the fridge until guests arrive.  Then simply pop in the oven.

Our Next Meeting

AGM & Egyptology Talk

Tuesday 20 October

7:45 for 8pm

Our October meeting will include our Annual General Meeting (AGM), where members will be updated on the performance and finances through the Annual Report and Financial Statement. We will also be voting in new committee members and saying a big thank you to those stepping down.

Then we are very fortunate to have Ali Ball come and give us a talk on Egyptology. Ali is a co-founder of the Kemet Klub which organises online lectures with some of the best Egyptologists in the world and a committee member with the Egypt Society of Bristol. She loves to combine her experience as a primary school teacher with her passion for ancient Egypt to deliver KS2 Egyptology workshops.

We are asking members to please bring in donations for Family Food Action

Since it is Harvest Festival time, we want to support this wonderful charity based at The Ardagh. They suggest: cereals, pasta, rice, beverages, tinned food, and treats like biscuits and cereal bars. Since a majority of recipients are vegetarian or do not eat meat, they focus on meat-free food donations. They also welcome toiletries, such as nappies, sanitary towels, soap, shampoo and baby toiletries. https://familyfoodaction.org.uk

Please do come along. Visitors are welcome at a cost of £7.50.

If you are interested in any of our events, please email us for more information on info@gloucesterroadwi.org.  You can also check our out website www.gloucesterroadwi.org.
